Origin Story

In the northern region of the Huila Department in Colombia, there sits a small town of Iquira. Around it, farms of many different crops can be found. This community lot from Iquira is comprised of Caturra, Castillo, and Colombia varietals, which thrive in the andesite-rich soil, a type of volcanic rock. In this microclimate, where the harvest season is shorter than that typical of Colombia, workers meticulously pick only ripe cherries, ferment them for 24-36 hours, and dry them on raised beds, ensuring quality throughout.
